Peanut Sauce Chicken Noodle Stir fry

For the Peanut Sauce
  1. crunchy peanut butter ½ cup
  2. soy sauce 2 tablespoons
  3. white sugar 1 teaspoon
  4. hot pepper sauce 2 drops
  5. garlic, minced 1 clove
  6. cup water ½
Stir Fry
  1. peanut oil 2 Tablespoons
  2. large boneless chicken breast, cubed 1
  3. package Ramen Noodles 1 (3oz.)
  4. diced red bell pepper ¾ cup
  5. diced yellow onion ¾ cup
  6. baby carrots, sliced in half 1 cup
  7. broccoli florets 2 cups

Instructions
  1. Combine all ingredients for the peanut sauce. Take half of the sauce to marinade the chicken in, and set the rest aside.
  2. Place the marinated chicken in a small frying pan over medium heat and sauté for about 10-15 minutes, or until cooked through.
  3. Meanwhile, cook the Ramen Noodles for no more than 1.5 - 2 minutes, (toss away the flavor packet). Drain, return to the pot and coat with the peanut sauce you set aside.
  4. In a large frying pan, heat the peanut oil and vegetables over medium heat for about 10 minutes. Stir in the chicken and Ramen noodles and continue to cook until the vegetables are tender.
